Baking with Jackie: No Baked Cheese Cake

Hola!
Want to have some cheese cake? It's either one needs to use money to buy it at the bakery shop or use your energy, heart and soul plus sweat (did it at the evening after working day. Seriously, halfway through, i felt like regretted not just getting a cake directly from the shop to make my life easier. ha ha~) to make it when you're just a noob at it. >.<

So, I wanted to make a no baked cheese cake for the boy on his birthday. Was so excited to make a cheese cake for him! Had many weird ideas in my mind. Hope it works smoothly yo!
Pre-planned like a couple of months ahead (even got him an advance birthday pressie, an electric grill -> LOL so that we could steamboat and grill whenever we want) on what ingredients to look for when I dropped by at the supermarket so that I won't missed out on the necessary ingredients at the last minute! ;)

Ingredients: Cream cheese 250g, whipped cream 200mL, a pack of Tiger milk biscuits, a can of S&W dark sweet cherries and half lemon juice. Don't forget your cake pan or aluminium foil cake mould. The foil is easier as I don't have to trouble myself transfering the cake when it's ready.


Here's the instructions:
1. Crush the #milkbiscuits & 4 tablespoonful of #cookingoil (substituted butter but not sure healthy or not. But eating cheese cake is already unhealthy anyway. LOL~) to make the base/ foundation of the cheese cake.
2. Beat the #whippedcream when it's cold and taken out directly from the refrigerator (did a huge mistake by thawing at room temperature for 1 hour together with my cream cheese >.< ) No wonder it took like ages to be whipped up and looked creamy. So much different than from the clips taught from the youtube channel. Supposed to take like ~5 min to whip it at a maximum speed with a mixer but i took around 30min and still leftover cream still looked like fresh milk plus my mixer was like almost heated up. In the end, some watery milk did splash out from my bowl onto the floor and some parts of the furniture too. I swear  this made me like giving up. fml~)🙈
3. Beat the room temperature #creamcheese, add half slice of squeezed #lemonjuice and 3-4 tablespoonful of #sugar according to preference. Beat them to homogenise the mixture.
4. Add the beaten whipped cream into the mixture and beat the mixture lightly to homogenise everything.


That is how the homogenised mixture looked like.

5. Pour the homogenised mixture onto the base and and even it on the mould. Place into the refrigerator for a couple of hours to chill it.
6. Open the can of #cherries and layer it on top of the #cheesecake to decorate the cake.

Decorate your cheese cake with cherries.

7. Refrigerate the cheese cake overnight before served! 🎂

Tada, Jackie's "ho liao" (yummy in the context for food) cherry cheese cake is ready!

Gave the boy a surprise by telling him to wait in the car after he dropped me back home at night. So, went to decorate the cake with the candles I bought it from DIY shop and lighted them up. 
As I was bringing it out and walking towards his car, due to the distance and wind, some candle lights got blown away. However, due to to having 13 lighted candles, the probability of having a few more lighted up is still high right. So, yeahh! :D

I think I could say that he seemed surprise and was really happy over it. Plus, he said he loved the cake!

Cooking with Jackie: How to Boil An Imitation Sharkfin Soup 😉

Boil the #water with #chicken bones, slices of #shiitakemushrooms #fishmaw fr an hour.
Get ready 3 tablespoonful of #cornstarch and dissolve it in water until homogenise. 
Add a pinch of #salt , #pepper , a teaspoonful of #thicksoyasauce to the boiling broth.
Take out the chicken bones and shred the pieces of meat frm the bones to add into the broth. 
Add the imitation defrozed sharkfin and stir the broth, add in the homogenised cornstarch and stir the broth and lastly add in 2 beaten eggs into the broth while it is boiling and stir gently.  Switch off the fire and serve the sharkfin broth or soup.
Garnish with some fried minced garlics, if needed. 
Tada! Yummy goodness golden soup on a rainy day! 😉

Ushering in the Year of Fire Rooster 2017 🔥 🐓

A couple of months before welcoming the Chinese New Year 2017 (according to the Chinese Lunar Calendar), traditionally and as according to culture, we would do some spring cleaning around at our homes for the preparation, Cleaning away all those dust is believed to welcome more good luck in our homes. To add to it, cleaning those windows and put up new curtains. 

Something small fr the security guards, pak cik cleaners and auntie cleaners to quench their thirst in conjunction with #cny 2017 #mandarinoranges #packetdrinks How could I forget those simple and genuine smiles and cute waving from the pak cik cleaners everytime they saw me driving into the organisation. A colleague also came to tell me happily that some cleaners got mistaken and thanked her instead~ Indeed, I managed to make everyone happy in a way.  I don't expect anything in return for this purpose 😀

Happy Year of #Rooster 2017! 
Our lucky pick #toyvendingmachine#softtoy costed us rm3 with only 2 games a few weeks before ushering in the new year with ah boy's luck.  😘🐓😍 Playing this kinda game could be at times addictive too~

Not sure how long it would be able to sustain in a small pot after buying from the supermarket. I fancy supermarket pottery flowers can't last long. Maybe the flowers would love to be in an air-cond environment. >.<

On the Chinese New Year eve (27th January 2017), we will be preparing lil' steamboat reunion for our lil' family gathering during dinner. Some family may have bigger group, some may have a smaller group, just like us :) However, our food preparation may look like serving a whole group of giants with a big appetite! hahaha~
Around noon, I helped my mommy to put up the red cloth above the main entrance door to usher in the new year at midnight. I believe that every single Chinese in the world does that for their homes, regardless of whether they are Buddhist or Christian. ;)
After dinner, if there were to have any floors that are dirty, sweep and mop it up before the clock strucked 12am as on the 1st day of Chinese New Year, we are banned from sweeping and mopping the floors to avoid luck from getting out from our home.

Immediately clock strucked 12am (midnight- 1st day of CNY), we prayed to usher the Fire Rooster for the year 2017. 
This is also a custom and religion that mom followed each year, which is to pray to the Gods. 
We worship to God of Heaven, God of Prosperity, God of Kitchen and God of Soil Ground/ Floor Guardian. 
In general, we are Buddhist. But we are more towards the Hokkien culture who follow the Taoist worshiping.Complicated. Don't question ppl's religion! :P

Chu yi (1st Day of CNY) which is today (as of 28th January 2017).
Snacking on this (US gift by the boy) while waiting for auntie and cousins to visit the parents! :)

Pesto for dinner, anyone?! ;)

1. Boiling the spiral pasta for about 8 min (add in a tablespoonful of cooking oil and half tablespoon of salt). Drain off the water after that.

2. Then, start cooking the chopped garlics with a tablespoonful of cooking oil. Add in prawns and cuttlefish (leftover from steamboats).
3. Next, open and put in the powdered premix pesto sauce and add a quarter to half cup of water and let it simmer at a medium fire. If it is too watery, add a teaspoon of cornstarch to make the sauce sticky.  Add in a teaspoon of sugar to taste.

4. Switch off the fire from the stove and add in the boiled pasta and toss to mix.

Finally got to find this #Belgian #Belgium #wheatbeer#hoegaarden #hoegaardenrosee#raspberries at places like #tesco 
It was previously sold at limited bar places. 

Well, it's slightly sweet with fruity berry taste. Thus the raspberries flavour. Alcohol content is also not high, only 3%! Ah boy said ribena alcohol though. But not really that ribena flavoured! 
I love this way better than other fruity alcohol drinks that I've tried.

Cooking with Jackie: Freshly Roasted Honey Chicken

1. Wash the chicken parts with tap water. 

2. Season the the chicken fr a minimum of 30 min with a dash of #blackpepper, half tablespoon of #salt  and two tablespoon of honey. 

Seasoning the raw chicken.

3. Pre heat oven at 190 degrees Celsius fr 10 min. 

4. Place the seasoned chicken on the tray layered with an aluminium foil to prevent unnecessary washing later. 

Seasoned chicken is ready to be roasted inside the oven.

5. #Roast  the chicken for 20 min at middle rack. 

6. Turn over all of the chicken parts to another side, layer the uncooked side with the honey juice used for seasoning and roast fr another 20 min. 

Cooked Roasted Honey Chicken. Nom nom nom~

Yummy freshly roasted chicken is ready to be served! 😋 
Easier than frying it~

Cooking with Jackie's Mommy: Fried Sambal Balitung (Edible Snails)

How to cook #sambal balitung (in our language) or also known as Obtuse Horn Shell or Mud Creeper or "Chut Chut (the sound of it when we suck the meat out when eating it) #edible #snails #molluscs 😉


1) 2 tablespoon of #oil
2) Minced #shallots
3) 2 tablespoon of #chillibowl
4) a piece of #belacan (shrimp paste)
5) Add in Washed n cut #balitung
6) 2 tablespoon of #sugar


Mommy is washing it under running water with a brush for several times.

Cutting its tail~ so that it could come out easily while sucking it after being cooked.

Balitung, after they have been washed, cut and washed again. Ready to be cooked on a wok!
