Cooking with Jackie: Chinese Styled Porridge

Here's a simple Chinese styled porridge I was making on last weekend.

Opening this Eu Yan Sang brand pack of Black Tea Mushrooms and Dried Scallop.

Goodness overload especially the one to the left. Scallopsssss heaven *yumm yumm*
Soak the dried scallops and mushrooms in a bowl of water for rehydration.
Some clips from youtube mentioned overnight. I randomly thought of using it...so I only managed to soak it for a few minutes. LOL~
Slice them into fine pieces to which ever size as you wish.






Place a cup of rice into a pot and wash it thoroughly until it is almost crystal clear looking in the water.
Place enough water as you wish (watery or drier porridge), the scallops and mushrooms ingredients into the pot and open the flame of the stove.
Wait for the porridge to boil and cook. Add more water if it is insufficient during boiling.
Stir frequently.
When it is almost ready, add a tablespoon of sesame oil, few dashes of soya sauce, white pepper and stir it.
Add  some salt to taste.
Stop the flame according to your desired porridge.
A simple porridge like this will take almost 30 min to cook.






















Porridge is ready with a dash of black pepper for flavouring. 
Feel free to make it more watery by adding more water during cooking.
